Dark and Muddy Chocolate Blueberry Slice
Sunday's are for relaxing...and what could possibly be more relaxing than cacao powder flying across the room and frozen blueberries splattering across your white t-shirt...OK, I don't do relaxed very well, but I am trying. This recipe came from a bit of mucking about and I was pleasantly surprised with the mud-cake-like thing going on with the base against the blueberry top. Noting that this is a dessert, and should be enjoyed as such, this slice has a good whack of anti-oxidants, protein and a whole bunch of fat, so if your into all those things, your will love this!
For the base take:
1 heaped cup of chopped medjool dates, removed seeds
1 cup cashews
1/3 cup raw cacao powder
1/4 cup melted coconut oil
-Mix all ingredients in a blender or food processor (warm the dates a little if they are hard). Press into a lined cake tin and pop in the freezer.
For the top bit:
2 cups frozen blueberries
2/3 cup almonds
1/4 cup coconut (shredded or flakes)
2 scoops vanilla protein powder
1/2 cup maple syrup/agave/coconut sap/honey/rice malt (take your pick- so many options)
2 tablespoon melted coconut oil
- Blend together in a food processor or blender, and pour over the base. Freeze for 3-4 hours or until solid all the way through. Serve slightly thawed and enjoy!
