Macadamia, coconut, cinnamon and vanilla cookies (gluten free)

The Cookie


1/2 cup coconut flour
3/4 cup macadamia meal
1/2 cup  of coarsely shredded coconut
1/3 cup coconut oil, melted
2 whole eggs, 1 white
1 heaped tsp cinnamon
1 tsp vanilla bean paste

 'C' is for cookie and that's good enough for me.

Method

Pre-heat oven to 180C

Mix all ingredients together to form a dough

Roll dough into small balls and press down with a fork

Bake for 15 minutes and allow to cool before serving.
